Responsibilities
Provide direct supervision to food production associates during daily work activity, perform shift briefings conduct in house audits; ensure compliance with regulatory standards including USDA and FDA. Perform daily temperature checks for coolers and products. Support supply chain optimization initiative. Audit Hazard Analysis Critical Control Points (HACCP) logs for accuracy. Ensure accuracy of menu specifications, flight numbers, aircraft configurations and meal counts. Work under time constraints to meet and respond correctly to meal up-counts. Ability to read specification books and production sheets. Monitor associates and ensure proper procedures are followed to maintain height quality products and service. Conduct training on all aspects of food safety, sanitation, hygiene, Good Manufacturing Practices (GMP) and quality. Perform quality audits and specs checks, including temp checks on food items and dish machines. Ensure and promote sanitary integrity of facility, equipment and food products. Perform biological testing, and food temperature checks to ensure safe product. Perform other duties as assigned or required.
Qualifications
Must be at least 18 years of age. Must be able to speak, read and write English. High School Diploma/GED or equivalent preferred. Candidate must be able to withstand exposure to hot and cold conditions. Willing to be flexible to work any shift in a 24/7 operation, including nights, weekends, holidays and overtime as needed. Candidate must have knowledge of standard kitchen equipment (including dish machines). One year post high school education in a culinary or management related field. Experience in the food processing/ manufacturing industry. Multi-task oriented. Good problem solving skills, ability to meet deadlines and work with time constraints. Pushing, pulling, lifting, and carrying items as needed. Frequent repetitive motion, reaching, and handling. Prolonged standing and walking. Above average attendance, safety and work performance record. Must be legally authorized to work in the US for any employer without sponsorship. *SAJ*
